In this episode of #socialdistancebaking, we’re gonna make some beer bread. It meets all of the baking requirements that I have right now: delicious, easy, and made with items typically found in pantries. This took even less time to prepare than my 30 minute blueberry scones, but the bake time was about 50 minutes.
The result: a bread that’s a bit like soda bread, but fluffier. I might experiment next time with less sugar — 1/4 cup is a lot and the bread does come out a little sweet — and try to use it as a sandwich bread. If you’re alone or just social distancing with one other person, consider cutting in half and freezing one half to eat later. Or eat it all in one sitting #nojudgment.
Special thanks to my friend Leah for sharing the recipe and my friend Curtis for leaving beers at my house.
